These hedgehogs with rice were once present on the kindergarten menu. In a light sour cream sauce, they are tender and juicy. Today we bake them in the oven, which means that it is also a healthy dish, and in the end there will be a minimum of dirty dishes.

Ingredients:

Minced meat - 500 g.

Bulb onions - 1 pc.

Vegetable oil - 2 tablespoons

Rice - 70 g.

Kefir - 3 tablespoons

Sour cream - 200 g.

Salt - 1/3 tsp

Prepare all food. I recommend doing minced meat yourself, in no case I advise you to ever buy it, and even more so use it when cooking.

I had beef, pork and chicken - I minced all this in a meat grinder. You can take whichever meat is more to your family's taste.

I recommend taking sour cream, not very fatty - 10-15%, it should be liquid in consistency. It is also quite possible to replace it with 20% cream.

Round grain rice is desirable - it cooks much faster than other varieties, therefore, it is optimal. Remember to rinse it well with cold water.

We need vegetable oil for frying, so refined odorless is perfect.

Let's start cooking. Pour boiling water over the groats and let it brew for 15 minutes, then drain the water and add rice to the minced meat.

Salt the minced meat, pour in kefir and knead the mass well.

What does kefir give? It is thanks to him that the finished meat balls are quite juicy. I advise you to always add it when preparing such dishes.

Peel the onion, cut into cubes, fry until golden brown. You can, of course, use it raw, but in this case there is a chance that it will crunch. In addition, in my opinion, it will be much tastier.

Add the contents of the pan to the meat mass and mix well again.

Form small balls. If you cook for children, then they can be very small, about the size of a walnut, and for adults, of course, larger. A large piece and the mouth rejoices!

Grease a heat-resistant form with butter, put the meat balls tightly enough to each other.

Pour in sour cream. Make sure that all meatballs are evenly covered with it. Salt a little.

Preheat the oven to 180 degrees in advance. Cover the form with balls with foil. Send the dish to bake for 30 minutes in the middle of the oven. Then open the pan and cook for another 15 minutes.

No garnish is required for our hedgehogs. Ideally serve them with vegetable salad and fresh herbs.
