This recipe has several nuances of preparation, so be sure to read it to the end so as not to miss important points.
So, first, beat 2 eggs with 2 tablespoons of sugar. You can also add a little vanilla or vanilla sugar if you wish. We also put a pinch of salt and beat everything thoroughly until smooth.
Now we take 500 ml of kefir and heat it. Kefir should be very hot, but not boiling. You can't bring it to a boil.
Pour hot kefir immediately into the egg-sugar mixture and stir quickly. After that, immediately add flour - about 450-500 gr. Also put half a teaspoon of baking powder and knead the dough with quick movements.
And here's another important nuance: we leave the dough for 10 minutes so that it cools down a little, and only then we begin to fry the pancakes. We spread the dough as usual with a spoon in a preheated pan with vegetable oil.
