They say that the most delicious fish soup is obtained precisely from river fish, and the smaller it is, the more rich and aromatic the hotter will turn out. River perch soup is prepared, first of all, in winter - it is at this time of the year that such a fish is caught. Therefore, a glass of vodka is often added to the broth for warming, so that the nutritious hot soup warms from the inside and the blood runs faster through the veins.

To create fish soup, in addition to fish, carrots, onions and tomatoes, as well as various spices are considered essential ingredients. Do not add potatoes, cereals or pasta! A very bright note in the dish is brought by stem or leaf celery, but if it is not possible to find such greens, then simply replace it with parsley.

Perch soup is cooked at home for no more than 20-30 minutes. Time is calculated based on the weight of the fish caught. By the way, such a soup can be cooked both from the usual striped and from the sun perch, which is popularly called the king.

Ingredients:

Perch - 400 g

Water - 1 l

Carrots - 1 pc. (small)

Bulb onions - 1 pc.

Cherry tomatoes - 4 pcs.

Bay leaf - 2 pcs.

Parsley - 0.5 bunch

Salt - 0.5 tsp

Ground black pepper - 4 pinches

Ramson (or garlic) - 0.5 bunch

How to cook:

Prepare food.

Thoroughly remove the scales from the caught or purchased fish. Open the belly of each perch and remove the entrails, remove them. If there is caviar, then leave it and rinse it along with the gutted fish.

Place the perches in a saucepan. Peel vegetables, except tomatoes. Rinse them in water and cut the carrots into slices and the onions into quarters. Add to container.

Pour in hot water, add salt and pepper, put bay leaves. Place the container on the stove and bring the contents to a boil. Remove the formed foam. Then reduce the heat and cook the soup for about 15 minutes.

Rinse the cherry tomatoes, cut them in half. Wash the wild garlic stems and chop them. Add with tomatoes and chopped parsley to a bowl. If desired, replace the wild garlic with fresh garlic. Boil the ear for about 2-3 minutes.

Then turn off the heating. At this stage, you can pour vodka into the fish soup.

Pour the cooked hot into the plates, not forgetting to put the boiled fish in them. Serve with black /rye bread or croutons. Perch soup with pickled hot chili, mustard, sour cream is especially tasty.
