Tart Taten is a delicious pastry recipe that came to us from French cuisine. This is an inverted pie, as the filling and dough are reversed during baking. That is, apples are baked in caramel under the dough, which, by the way, can be flaky or shortbread, as in our case.
Tart Taten is served as an independent dessert or with a scoop of ice cream.

Ingredients:
Wheat flour - 150 g
Butter - 170 g
Water - 5-6 tbsp. l.
Sugar - 100 g
Apples - 6 pcs.
Cinnamon - 1 pc.
Salt - 1 pc.
Step by step recipe:
We prepare the necessary products according to the list.
Sift flour into a bowl, add a pinch of salt. Cut butter (100 g) into cubes, combine with flour and grind into crumbs with your hands. We do it quickly so that it doesn't start to melt.
With the addition of cold water, we begin to knead the dough.
The gingerbread man should turn out to be elastic, well behind the hands. We wrap the dough in plastic wrap and put it in the refrigerator while we deal with apples.
Heat the sugar in a dry frying pan, stirring all the time. As soon as it becomes caramelized, add the remaining butter. Warm up to a uniform caramel mass, not forgetting to stir with a spatula.
Pour the caramel into a mold in which we will bake the cake. I have it with a diameter of only 16 centimeters, so I bake two such small pies.
We wash three apples, peel and seeds, cut into equal slices. Place the apple slices on the caramel in a circle. The apples will caramelize in it during the baking process.
Sprinkle with cinnamon on top. We turn on the oven to warm up to 180 degrees.
Divide the dough into 2 parts if there are two Tart Taten. Roll out into a round cake no more than 0.5 cm thick. Cover the apples with the dough, gently press the edges inward and make punctures with a fork so that it does not swell when baking.
We put the dish in the oven and bake for 40-45 minutes until golden brown.
We immediately turn the hot pie onto a dish, serve it cooled down to the table. Similarly, bake the second of the remaining dough and apples.
