Lobio is a dish of Georgian cuisine, the main component of which is beans. Most often, meat is used for cooking: lamb, beef, chicken. Today we will prepare the meatless green beans lobio. The dish is served both hot and cold. I propose a recipe that each of us can cook in our own kitchen.
Ingredients:
- Green beans - 200 g
- Onions - 100 g
- Bulgarian pepper - 150 g
- Tomatoes - 150 g
- Green onions - 50 g
- Parsley - 30 g
- Walnuts - 70 g
- Garlic - 3 cloves
- Vegetable oil - 30 g
- Salt to taste
- Ground black pepper - to taste
- Hops-suneli - 1 tsp
For cooking lobio, not only fresh but also frozen vegetables are suitable. It is advisable to peel the tomatoes. Finely chop the walnuts. Use dill, parsley, green onions, cilantro, basil from herbs, but you can choose according to your taste.
Rinse the green beans well if fresh. Dip in boiled water, which needs to be slightly salted. Put frozen beans in boiling water immediately without defrosting.
Bring the contents of the pot to a boil and cook for 8-10 minutes. The main thing is not to overcook the beans to keep their shape, as they will still be stewing.
Throw the boiled pods in a colander and wait a little so that all the liquid is glass. Can be rinsed with cold water to suspend the thermal process. Cut long pods into 2-3 pieces.
Peel the onion. Cut into small cubes. Heat unscented oil in a deep frying pan. Add onion. Fry for 5-7 minutes over medium heat.
Cut the peeled bell pepper into large pieces. Add to the onion and stir. Fry for 2-3 minutes.
Cut the tomatoes into small pieces or grate them. Add to the pan. If not fresh, you can use tomatoes in their own juice or quality tomato paste or sauce. Mix. Simmer covered over low heat for 8-10 minutes.
Add boiled green beans.
Peel the garlic, chop finely or pass through a garlic press. Chop the greens to small pieces. Add to the pan. Season with ground pepper (preferably freshly ground), suneli hops and salt. Mix. Cover and simmer for 8-10 minutes over low heat.
Add chopped nuts at the end of cooking. Stir and turn off heat.
The green bean lobio is ready.
Serve hot as a main course. Can be used as a cold snack with bread.
