Spinach Cream Soup: Can Be Eaten by Vegans, Vegetarians, Fasting People and Anyone on a Diet

I would like to bring to your attention a very tasty and healthy spinach cream soup. We will cook without meat, it will be a lean dish, so it can be eaten by vegans, vegetarians, fasting people and anyone on a weight loss diet, since it is also low in calories. If desired, potatoes can be replaced with sweet potatoes, then the soup will also turn out to be as healthy as possible.

Ingredients:

  • Spinach - 200 g
  • Potatoes - 3 pcs.
  • Carrots - 1 pc.
  • Bulb onions - 1 pc.
  • Garlic - 1 clove
  • Lean oil - 1 tsp
  • White wine vinegar - to taste
  • Seasoning for soup - optional
  • Bay leaf - 2 pcs.
  • Salt to taste
  • Ch.m. pepper - taste
  • Water - 700 g

Prepare all the food you need to make the soup. Peel potatoes, onions, garlic and carrots. Wash everything under running water.

Heat some vegetable oil in a saucepan with a thick bottom, put finely chopped onions and carrots in it. Simmer them over low heat for a couple of minutes.

Pour hot water from a kettle into a saucepan, bring to a boil.

Cut the potatoes as you like. In our case, the slicing does not matter at all, since the soup at the end of cooking will be pureed with a blender. Boil the potatoes for about 15 minutes, until cooked through.

In the meantime, take apart a large bunch of greens. Since spinach is grown on sandy soil, you need to rinse each leaf separately. Remove the stems, they are sometimes very fibrous.

When the potatoes are done, add the crushed garlic and bay leaf to the soup.

Throw in the spinach leaves. As soon as they get into hot water, they immediately decrease in volume. Boil the soup for 3 minutes, it makes no sense longer, since you need to save all the nutrients.

Now you can add some white wine vinegar. Since the soup will be bland, season with salt and pepper to your liking.

Recently, various condiments marked "organic" began to appear on the shelves, they are free of glutamate and preservatives. If you see one, buy it and add it to your soup.

Don't forget to catch the bay leaves. Punch the contents of the pan with a hand blender until puree.
