If you want to prepare blueberries for the winter, while preserving the maximum vitamins and natural taste, use the rolling method in your own juice. The berry will not be directly subjected to heat treatment; the recipe involves pasteurization in a jar. Also, a big advantage of this workpiece is the low consumption of sugar, while blueberries are absolutely not sour, they just have an ideal taste.

Ingredients:

Blueberries - 500 g.

Sugar - 3 tablespoons

Prepare food.

Place the blueberries in a container. Fill it with water and remove any debris that floats to the surface. Repeat this procedure a couple of times.

Carefully throw the berries into a sieve, rinse with running water, leave in this state for 10 minutes to remove all excess moisture.

Prepare the jar in advance: scrub, wash, sterilize for 10 minutes over steam. Boil the lid in water for 5 minutes.

Fill the container with blueberries. Lay it as tightly as possible without pressing on the berries.

Place a container of water on the stove, and put a silicone mat or thick cloth on the bottom. Place a jar filled with blueberries on top, cover with a lid, but do not twist it. The liquid in the pot should reach the very neck of the jar.

Heat the water gradually, after boiling, reduce the fire a little so that it boils slowly. After 5 minutes, the berry will settle down a little, fill the empty space with sugar. Continue the pasteurization process.

The sugar will begin to melt, and the berries will settle to the bottom of the jar. Gradually fill in the empty space with fresh blueberries.

The entire pasteurization process takes 30 minutes. During this period, the jar can be taken out once, covered with a lid and shaken so that the sugar settles to the bottom and dissolves faster. As a result, the berry will release enough of its own juice.

Using the oven mitts, remove the jar, immediately close the sterile lid as tight as possible. Flip on its side to check secure twist. If sugar remains at the bottom of the jar, there is nothing to worry about, it will completely dissolve during additional pasteurization of the workpiece under a warm blanket.
