Lecho "Uncle Bens" has recently become very popular among other conservation. It differs from the usual one by the presence of zucchini. Thanks to them, the preparation turns out to be much juicier and tastier.

The cooking process is not the fastest, since all vegetables are sliced. During stewing in lecho, in addition to the tomato mixture, tomato paste is added - it makes the taste and color of the dish more intense.

Ingredients:

Zucchini - 1.5 kg.

Sweet pepper - 1 kg.

Tomatoes - 1 kg.

Onions - 1 kg.

Sunflower oil - 200 ml.

Garlic - 20 gr.

Salt - 20 gr.

Sugar - 250 gr.

Vinegar 9% - 50 ml.

Water - 0.5 l.

Tomato paste - 100 gr.

Step by step recipe:

Prepare components according to the list. The number of products is indicated for 4 liters of ready-made snacks.

Rinse the zucchini, cut into thin strips. You do not need to peel off the skin. Slicing vegetables can be either small or large (if desired), but they are most delicious if they are medium in size.

Divide the pepper into two, remove the seeds and soft partitions, cut the pulp into strips. Peel the onion, chop in the same way.

Rinse the tomatoes, cut into slices, place in a blender bowl and beat until puree. You can also use a meat grinder for this.

Load all vegetables into a large saucepan, add chopped garlic. Put the container with the contents over medium heat.

Then add salt and sugar, add vegetable oil. Mix thoroughly. Continue stewing.

When the vegetables start to juice and begin to shrink, add the tomato mixture to them. Then add the tomato paste, stir again so that it is evenly distributed.

Simmer the lecho over low heat, covered for the next 40 minutes. Stir it periodically so that the bottom of the mixture does not burn.

Pour in vinegar 5 minutes before the end of stewing. Taste the dish, add salt and sugar if necessary.

Immediately pack the hot mass from the fire into sterile jars, tighten the lids tightly.

Cool and take the Uncle Bens lecho to a dark, dry place.
