Every housewife bakes pies, but I love them not from the oven, but fried in a pan. They turn out to be much tastier, and they stay soft longer. With apples or jam - they are perfect for tea drinking, and with cabbage and meat - for broth.
The highlight of this recipe is the dough. It is cooked with kefir, but it turns out soft, airy and obedient. It's incredibly pleasant to work with him!

Wheat flour - 400 g.
Dry yeast - 11 g.
Salt - ¼ tsp
Sugar - 1 tsp
Kefir - 200 ml.
Vegetable oil - 100 ml.
Filling 1:
Apple - 1 pc.
Butter - 30 g.
Sugar - 1 tablespoon
Filling 2:
White cabbage - 300 g.
Chicken egg - 1 pc.
Vegetable oil - 2 tbsp.
Salt - 1 pinch
Step by step recipe:
Prepare all the food you need. I want to note that all of them should be at room temperature, so remove kefir from the refrigerator in advance. It can be taken even with an expired date.
Choose a cream-colored flour, not bleached with chlorine - this, as a rule, is not the highest grade, but the first.
For kneading, take a larger dish, because the dough will increase in volume. First of all, sift all bulk products into it. I advise you to definitely use a sieve - this process saturates the flour with oxygen, and the finished pies are airy.
Pour the fermented milk product and butter into a bowl.
Knead the dough well with your hands until smooth. Cover with a damp towel or plastic wrap, put in a warm place for 40 minutes. It should double in size.
In the meantime, let's get to the stuffing. We will have two types of it: sweet fruit and vegetable. For the first option, cut the apple into cubes.
Melt the butter in a saucepan. Transfer chopped fruit, sugar and sauté until soft, about 10 minutes. You can flavor the apples a little with cinnamon or vanilla. Cool it down.
Chop the cabbage into strips.
Heat oil in a skillet, add cabbage slices and simmer for about 20 minutes. Don't forget to add salt.
Boil the egg, cool, chop. Add to cabbage and stir.
Separate a piece the size of a walnut from the dough, make a tortilla, put a little filling in the middle.
Pinch the edges well and shape into a patty. Do this with all the dough and filling.
In a frying pan (take a medium size, but always with high sides), bring the vegetable oil to a practically boil. Next, fry the pies on all sides over low heat.
They are delicious both hot and cold.

Such pies do not need to be fried in a pan. You can also bake them in the oven, after greasing them with an egg or milk. In this case, the temperature regime will be 190 degrees, and the cooking time will be 45 minutes.
