The first dish must be present on the table at lunchtime, especially on cold winter weekdays, for example, soup with meat and potatoes.

Any kind of meat can be. Beef is boiled the longest - about 1.5 hours, then lamb - 1-1.2 hours, pork - 1 hour. First, the meat is cooked for a long time and only then the rest of the ingredients are put into the broth. Otherwise, you will end up with either tough meat and tasty vegetables, or soft meat and porridge made from boiled vegetables. The most delicious and aromatic soup is made from lamb, which can be purchased in the meat block market or in the supermarket.

Do not forget about spices and seasonings - they will add new flavor notes to the first course. Add fresh herbs at the very end so that you can feel their aroma in the soup.

Ingredients:

Lamb - 350 g

Potatoes - 3 pcs.

Carrots - 0.5 pcs.

Bulb onions - 1 pc. (small)

Vermicelli - 3 tablespoons

Water - 1.5 l

Salt - 0.25 tsp

Bay leaf - 3 pcs.

Ground black pepper - 2 pinches

Dill - 0.5 bunch

How to cook:

Prepare food. Rinse the lamb in water, cut off the veins and films. It is best to buy meat on the bone - the broth will be more aromatic and tasty.

Place the washed pieces of lamb in a saucepan or cauldron, add bay leaves and cover with cold water. Boil the lamb for 1-1.2 hours on moderate heat, sometimes collecting foam.

After the indicated time, peel the vegetables, rinse them in water. Cut the potatoes into medium cubes, the onions into small cubes, and grate the carrots on a fine mesh grater.

Once the meat is tender, transfer the vegetable cuts to a container and add water. Simmer for about 10 minutes on moderate heat.

Then toss in the vermicelli and season with salt and pepper to taste. Cook for another 5 minutes. Instead of vermicelli, it is permissible to use spaghetti.

Rinse the dill herbs, chop and add to the pan 2-3 minutes before the first course is ready. Taste the soup with meat and potatoes, tweak it if necessary.

Cover the pot with a lid and let the first dish sit for 5-10 minutes. At this point, you can press a couple of peeled garlic cloves into it if you like savory tastes or don't like the lamb flavor.

Pour the soup into deep bowls and serve hot, optionally with sour cream or mayonnaise.
