Aromatic and delicious white currant jelly will be the best treat for those who do not like sugary desserts. Since the berry itself has a sour taste, the jelly will turn out to be perfectly balanced, both adults and children will gladly eat it. Dessert is served in small bowls, garnished with whipped cream and berries, fresh mint leaves, chocolate chips, etc.

You can buy white currants during the harvest season at the market or in the store, but in the winter - only in the freezer department. By the way, about 15-20% of sweetness is lost in berries subjected to quick freezing, therefore, when preparing jelly from them, slightly increase the amount of granulated sugar. Those who do not like sugar are advised to replace it with flower honey, mixing this sweet product into the slightly cooled, strained mass.

Ingredients:

White currant - 300 g

Water - 1 tbsp.

Sugar - 80 g

Gelatin - 10 g

Whipped cream and mint - for garnish

Prepare food.

Sort the purchased white currant berries, removing damaged or spoiled ones. Rinse them thoroughly in water, being careful not to crush them. Pick the berries off the brushes. Discard the stems and pour the berries into a cauldron or ladle with a non-stick bottom / saucepan.

Add granulated sugar and warm water there. Do not add citric acid or juice, as the berry is sour. Place the container on the stove and cook the entire contents for about 15-20 minutes. It is advisable to use medium heat so that the foam does not spill over the edges of the cauldron during boiling.

Turn off the stove, remember the currant berries with a boiled potato press or a regular fork. Next, add gelatin and stir it into the liquid. Leave for 5 minutes, then mix the contents of the container thoroughly to dissolve the gelatin powder. Strain everything through a strainer, removing the cake. You will no longer need it in your recipe.

Pour the strained liquid into small bowls / glasses / cups. Place in the cold for about 1 to 2 hours, until solidified.

Once the jelly has set, it can be tasted, but garnish with whipped cream, white currants, fresh mint leaves, or other sweet ingredients first.

Serve chilled only! Such a delicacy is very relevant in the summer heat - it both refreshes and nourishes!
