What dish do you think creates a cozy atmosphere in your home? In my opinion, homemade baked goods have this feature. Especially pies, with their fabulously aromatic fillings. It takes a little patience and a good mood to make the dough successful and the filling tasty.
Today we are preparing a yeast pie with the simplest cabbage filling. At your discretion, it can be supplemented with chopped eggs, mushrooms or fish.
This amount of dough is designed for a large cake with a diameter of 26-28 centimeters. You can make it not round, but square / rectangular using a baking sheet.
Ingredients:
For the test:
Fast acting yeast - 7 grams
Milk - 340 ml.
Wheat flour - 740 grams
Vegetable oil - 1 tablespoon
Sugar - 2 tablespoons
Eggs - 3 pcs.
Lubrication yolk - 1 pc.
Salt - 1 pinch
Butter - 60 grams
For filling:
White cabbage - 500 grams
Bulb onions - 1 pc.
Greens - 1 bunch
Vegetable oil - 2 tablespoons
Salt to taste
Ground black pepper - to taste
Butter - 1 tablespoon
Course of action:
I prepare all the necessary products for the dough: 160 grams of flour, half the milk norm (170 ml), sugar and yeast. If you are using fresh yeast, triple the amount to 21 grams.
I heat the milk to room temperature, dissolve the sugar, add the yeast and stir well. Sift flour through a sieve and add to this mixture.
I stir the dough, cover with cling film and leave for 30 minutes until the volume increases and a "frothy cap" appears.
While the dough ripens, I prepare the rest of the products for making the dough.
I put the sifted flour in a container. I make a small depression in the center. I pour in the remaining milk, drive in the eggs, add salt.
Melt the butter in the microwave for 10 seconds. I cool and add it to the dough along with vegetable oil and dough.
I knead the dough for 7-10 minutes. At this stage, it is advisable to use a kitchen machine.
I put the finished dough in a container greased with vegetable oil, cover with a tea towel and leave it for an hour to rise.
While the dough is coming up, I prepare the filling. Chop cabbage, cut onion into strips.
In a frying pan I heat a mixture of butter and vegetable oil. I spread the cabbage with onions and the carcass over medium heat, covering with a lid. With this method, the cabbage in the filling turns out to be light. It can be fried if desired. At the end I add chopped herbs, salt, black ground pepper.
I divide the matched dough into two unequal parts. I roll out most of it and spread it on the bottom and sides of a frying pan greased with vegetable oil. I distribute the cabbage filling.
I cover the top of the pie with the rest of the dough. I fasten the edges and cut off the excess. They will be used to decorate baked goods.
Leave the cake to stand for 30 minutes before baking. Then I grease it with egg yolk mixed with 1 tbsp. milk.
Preheat the oven to 180 degrees. I bake a cake for 40-45 minutes.
