First, I prepare the brine. I add salt, sugar, pepper, coriander, cloves and bay leaves to the boiled water. I bring it to a boil, let it boil for a minute and remove it from the heat. I remove bay leaves and cloves. I add vegetable oil and mustard. Stir and leave to cool completely.
I cut the mackerel in portions. It can be chopped together with the bones (without filleting), or even whole fish can be salted like that. But this is most convenient.
I fill the fish with cooled brine and put it in the refrigerator for a day.
You can't tear yourself away from this fish! especially delicious with mashed potatoes. I store fish directly in brine in the refrigerator. You can also cook herring.
