It is unfair to think that autumn is the saddest time of the year. A riot of colors, delicious apple pies, the opportunity to enjoy warm autumn days, harvesting the last harvest and rolling for the winter do not give time for melancholy.

Today I will share a recipe for one of the family's favorite tomato and onion preparations. It is designed for lovers of sweet canned tomatoes. Reduce the amount of sugar if desired.

For canning pickled tomatoes "Lick your fingers" it is advisable to use medium-sized tomatoes, dense and fleshy. From this amount, at the exit, three cans of 500 ml each, two of 700 ml and one liter jar were obtained.

Ingredients:

Tomatoes - 3 kg.

Water - 1.5 liters

Sugar - 6 tablespoons

Salt - 1.5 tablespoons

Table vinegar - 100 ml.

Bay leaf - 5 pcs.

Black peppercorns - 10 pcs.

Allspice peas - 10 pcs.

Onions - 500 grams

Garlic - 1 head

I am preparing the necessary set of products for canning. If desired, you can add any chopped herbs and hot peppers to the appetizer.

For the marinade, pour water into a suitable sized saucepan. I add sugar, salt, pepper, bay leaf. I put it on medium heat. I bring it to a boil, pour in the vinegar. Let it boil again.

I cut the tomatoes in half lengthwise. If the fruit is large, you can cut it into quarters.

I cut the onion into rings. For these purposes I use a special grater. I cut the garlic into slices.

I prepare banks in advance. I sterilize them in the microwave, filling them half full with water, at full power for 7 minutes. I fill the lids with boiling water and leave for 3-5 minutes.

I put tomato slices in prepared jars, sprinkling them with onion rings and garlic cloves. I fill it with ready-made marinade.

I put a cloth napkin at the bottom of the pan, set the jars, cover them with lids and add water to the container at the level of the "hangers". I bring the water to a boil over medium heat and sterilize the workpieces for 10 minutes.

At the end of the sterilization time, I carefully take the jars out of the pot and seal the lids tightly with the preservation key.

Flip the cans and cover them with a blanket. I leave it like this until it cools completely. I store it like any preservation.

An appetizer of pickled tomatoes with onions is not capricious and unpretentious. It is well stored and eaten very quickly, fully justifying its name "Lick your fingers". Fragrant sweet tomatoes, crispy onions - what else do you need for a great meal? By the way, delicious spicy pickle is also drunk with pleasure.
