I think that the older generation, for sure, should remember the "Nezhinsky" salad in the form of preservation, which has always been on the shelves of grocery stores, even in times of general shortage. But few people know that it can be quickly prepared at home, as an appetizer, and served on the table, because it just goes well with barbecue.
The composition of the salad is simple, from the most inexpensive products that every housewife always has at hand. While you string meat on skewers and light the grill, the vegetables will marinate. Such a snack can be prepared both outdoors and in advance at home.
Ingredients:
Fresh cucumber - 1 kg
Vinegar 6% - 3 tablespoons
Salt - 1 tablespoon
Sugar - 1.5 tablespoons
Dill - 25 g
Onions - 180 g
Black pepper - to taste
Lean oil - optional
How to cook:
Prepare all the food you need to prepare the salad. Choose young cucumbers with thin skin and transparent seeds.
Peel the onion. Wash the vegetables under running water along with the dill, dry slightly.
Cut off the tips on both sides of the cucumbers, a little more on the side of the tail, to be sure to cut off the bitter part, if any. Cut the vegetables themselves into slices 0.3-0.4 millimeters thick. Place everything in a deep, comfortable dish.
If the bulbs are small, they can be cut into rings, and if the bulbs are large, they can be cut into half rings. Thickness - 0.2-0.3 mm maximum. Sprinkle the onions over the cucumbers.
Remove the dill sprigs from the stems. Finely chop the grass and add to the vegetables.
Now add salt, sugar, vinegar and black pepper, freshly ground to taste.
Stir the salad gently. Leave it at room temperature for about an hour, then place the container in the refrigerator and continue to marinate for about an hour.
In fact, the longer the cucumbers are pickled, the tastier the finished dish will be. Remember to stir from time to time - all ingredients should be marinated evenly.
After about an hour, the cucumbers will release a lot of liquid, the salt and sugar will dissolve, and you will get a very tasty marinade, in which the salad will be all the time.
When the cucumbers and onions are well marinated to your taste, the salad can be spread out in portions or put in one large plate. The liquid, of course, must be drained. If you wish, you can sprinkle vegetables with delicious vegetable oil, but if you serve Nezhinsky salad to chicken kebab or porkthen it will be superfluous.
