No one knows why this colorful and aromatic sauce got such a name, but one thing is for sure - those who try it one day will no longer want to buy store-bought sauces and mayonnaise! Greens give the dish an incredibly fresh taste: spinach, green onions, mint, dill or parsley, cilantro or celery. You can mix these herbs to your liking, each time getting new culinary masterpieces.
The sauce is created on a sour cream basis, so it is very important to choose a quality product. But the fat content of sour cream does not play a big role - vegetable oil is also added to the recipe.
In addition to the fact that Berlin sauce is an excellent salad dressing, it can be served with boiled potatoes, mashed potatoes, pasta, and porridge. You can even bake fish, meat or vegetables in it.
In the spring season, it is advisable to always have a jar of homemade sour cream and fresh herbs in the refrigerator. From them you can quickly prepare a sauce that will help you out in any situation when creating other aromatic dishes.
Ingredients:
- Sour cream of any fat content - 200 ml
- Green onions - 0.5 bunch
- Spinach - 1 bunch
- Mint - 0.5 bunch
- Dill - 1 bunch
- Salt - 2 pinches
- Ground black pepper - 1 pinch
- Vegetable oil - 2 tbsp.
Prepare food.
Take a bunch of spinach in your hands, rinse each leaf from dirt and dust. Cut the stems off the leaves. It is the spinach that will give the sauce a green color - the rest of the greens cannot cope with this!
Slice the washed spinach into ribbons and place in a deep bowl with high sides or in the bowl of a blender, chopper.
Wash the scallions and dill. Chop and add to the container too. If desired, dill can be replaced with parsley, or you can add this spicy greenery along with the rest.
Rinse the last and chop fresh mint.
Many culinary experts recommend adding cilantro at this moment, but not everyone loves its tart taste in the sauce, so act on your own.
Put sour cream of any fat content. Season with salt and pepper, add oil.
Instead of sour cream, it is permissible to purchase a classic thick greek yogurt without additives. If in your region there are no difficulties with the purchase of farm sour cream, then it is better to use it - it is more useful and of high quality.
Kill everything with a hand blender or grind in the bowl of a food processor, chopper. The sauce will immediately turn green and flavor.
If you want more spicy taste, press a couple of cloves of garlic or put chopped green garlic in a bowl with herbs.
Now transfer the prepared sauce to the gravy boat and refrigerate for 15-20 minutes so that it absorbs all the flavors and soaks them in. Then serve.
