Chicken lentils are a complete main course for a hearty and healthy lunch. Cooking in a frying pan, where, alternately, first fry additional vegetables, and then meat and legumes. Next, fill the mixture with water and continue to simmer in the same pan. This conveyor cooking method saves time considerably. We use the chicken fillet, due to which the dish turns out to be low-fat, while very juicy.

Ingredients:

  • Red lentils - 1 glass
  • Chicken fillet - 300 gr.
  • Bulb onions - 1 pc.
  • Carrots - 1 pc.
  • Water - 2 glasses
  • Vegetable oil - 2 tablespoons
  • Curry - 0.5 tsp
  • Salt, pepper - to taste

Prepare food. Use red lentils, this variety boils down quickly and has a very delicate texture.

Cut the head of the onion into a medium cube, toss it onto the heated surface of the pan, previously greased with vegetable oil. Saute for the next 2 minutes over low heat.

Add sliced ​​carrots to the onion. It can be chopped into slices, diced or grated on a coarse grater. Fry for a couple more minutes.

Prepare the fillet: cut off the layers of fat, peel off a thin film, rinse the meat, cut into medium-sized pieces. It is not necessary to cut too finely so that the chicken does not turn out dry after frying.

Slide the vegetables into one end of the pan, increase the heat, add another 1 tbsp. oil, heat. Then place the meat. Fry the chicken on both sides for 3 minutes. Sprinkle with curry, salt and pepper.

Rinse the lentils several times with running water, discard in a colander, remove the liquid.

Next, transfer the legumes to the pan with vegetables and chicken.

The mixture, stirring constantly, fry for 3 minutes so that the lentils absorb the meat and vegetable juices.

Pour hot water over the dish, season with salt and pepper to taste. After boiling, reduce the heat, cover the pan with a lid. Simmer the lentils and chicken for the next 20 minutes without stirring.

After a while, all the liquid should be absorbed into the lentils, and it, in turn, should boil down and become soft.

Arrange the dish on plates, add herbs.
