Green beans with eggs are a good option for breakfast or lunch. Cooking is quite simple, and the result is always excellent, especially with young seasonal vegetables. It turns out a kind of vegetable scrambled eggs.

In addition to green beans and eggs, tomatoes, some young onions and a couple of garlic cloves must be added to the dish. You can serve it to the table just like that - in addition to toast or a slice of bread, but you can also add some vegetables or herbs.

If you decide to prepare a meal in winter, use frozen vegetables. Choose spices and herbs to your liking.

Ingredients:

Green beans - 100 g

Fresh tomatoes - 80 g

Onions - 50 g

Garlic - 2 cloves

Chicken eggs - 2 pcs.

Hard cheese - 50 g

Salt, pepper - to taste

Vegetable oil - 1 tbsp.

Cooking process:

1. Prepare the required ingredients according to the list. Wash and dry all vegetables.

2. Cut the young onions into small cubes, peel and chop the garlic cloves.

3. Choose a fresh large tomato, cut out the place of growth of the stalk from it. Cut into cubes. If the skin is thin, leave it, if it is hard and thick, remove it: make a cross-shaped incision on the tomato, pour boiling water over it and leave for a couple of minutes, then peel off the skin with ease.

4. Wash and dry the green beans, trim the tails on both sides. After that, cut the pods into 3-4 parts to make small strips.

5. Heat a spoonful of vegetable oil in a frying pan, first load onion and garlic into it and sauté for a couple of minutes. Then add slicing tomatoes and beans.

6. Simmer vegetables under a lid for about 7-10 minutes, the heat should be low.

7. After a while, drive chicken eggs into the steamed vegetables, sprinkle everything with salt and ground pepper. Chill with a little hard cheese. Bake the dish covered for 4-5 minutes.

8. That's all, you can serve beans with eggs to the table.
