Everyone has long known that the thickest pancakes are made on the basis of a fermented milk product. When using kefir, choose it with a medium or high fat content. The fatter it is, the tastier the pancakes will come out. They are made thick by the reaction of warm kefir and baking soda. However, a clear sequence of connection of all components is important here.
For baking fluffy pancakes on kefir, a cast-iron pan with a thick bottom, or a pancake with a non-stick coating, is best suited. Then the thick pancakes will bake evenly, will not stick, and will have a pleasant golden color.
Ingredients:
Kefir 2.5% - 500 ml.
Flour - 300 gr.
Chicken eggs - 2 pcs.
Sugar - 2 tablespoons
Salt - 0.5 tsp
Baking soda - 1 tsp
Vegetable oil - 1 tablespoon
How to cook:
Prepare the food you need.
Drive eggs into a spacious container, add a norm of granulated sugar to them, throw a pinch of salt. Eggs should be at room temperature, so remove them from the refrigerator beforehand.
Take a whisk and carefully chop the contents of the bowl to make a uniform mixture. The loose ingredients should dissolve slightly.
Warm the kefir slightly until warm, then pour it into the egg mass, stir vigorously.
Then add the indicated serving of vegetable oil.
Next, add baking soda in the indicated quantities to the main composition and mix. Since the dough contains an acidic environment, it is not necessary to extinguish it with vinegar.
Sift the flour through a fine sieve in advance so that it gets rid of possible debris. Then pour it into the liquid mixture in small portions, stirring in parallel with a spoon.
Now go through the dough with an immersion blender, thereby completely ridding it of unbroken lumps of flour. Cover with foil, set aside for 20 minutes, so that the soda is completely in contact with the kefir.
After a while, heat the pan, apply a thin layer of oil with a silicone brush. Place a small portion of the dough on a hot surface without stirring.
Keep the fire slightly above average. When a lot of bubbles appear on the workpiece, turn it over to the other side, fry in the same way.
Fry all the pancakes this way.
Thick pancakes on kefir are ready.
Serve while still warm in tandem with berry jam, condensed milk or honey.
