Crumbly bagels with a pleasant creamy aroma are baked goods for every day, for buffet-tea parties, treats for children and adults. Knead the shortcrust pastry with sour cream and butter in equal proportions, then both a characteristic expressive taste and a brittle structure will appear.
Use assistants to form stuffed bagels. In four, or even six hands, the matter is argued. In addition, sculpting involves the simplest steps.

Wheat flour - 300 g
Sour cream - 100 g
Butter - 100 g
Soda - 0.25 tsp l.
Lemon juice - 10 g
Sugar - 40 g
Filling:
Jam - 100 g
Cottage cheese - 100 g

To make filled shortbread bagels at home, use the listed foods. Soda can be extinguished with both lemon juice and vinegar. Replacing butter with margarine, you reduce the cost, but noticeably lose in taste.
Bagels are also good because they can easily change the size of the products and the filling. My recipe contains cottage cheese and strawberry jam. Add berries, dried fruits and fresh fruit pieces, nuts, nuts with poppy seeds and raisins as desired.
In the appetizer version, exclude sugar and fill with mushrooms, stewed cabbage, ham, cheese, mashed potatoes, minced meat - the appetizer will not yield canapes and tartlets.
Shortcrust pastry for bagels is kneaded by hand or in a food processor. First, we combine sour cream of any fat content and butter at room temperature (with melted soft, it is easier to work).
Immediately extinguish a portion of baking soda with lemon juice or table vinegar, shake with sour cream. Mix the sticky ingredients. Without zeal.
Pour in about 150-180 g of flour and proceed to active kneading. We add the rest of it along the way. Perhaps a little more or less of the indicated dosage will go away - it depends on the quality of the flour.
Knead until plastic, soft and homogeneous. Please note that there is no sugar or eggs in this test.
We divide the large ball into four balls of equal weight / size. Roll out round cakes with a diameter of about 25 cm one by one, separate the uneven edge around the circumference. Then we cut into eight identical segments - we pass the knife through the center of the layer.
We spread jam and cottage cheese (or other filling). Place it at the base of the triangles.
Roll up from the same base with the filling to the opposite corner. Sprinkle with sugar on top.
Transfer to a baking sheet with parchment in rows with a short distance. We bake in a pre-heated oven at 180 degrees for about 25 minutes. Cool it down.
We serve weightless shortcrust pastry bagels with jam and cottage cheese to tea and other drinks.
