Fried oyster mushrooms with onions are rightfully considered an independent dish, but they can be garnished with any boiled cereals, pasta or vegetables, they are especially tasty in a duet with mashed potatoes. Many rational housewives immediately purchase a large batch of these mushrooms and fry them with onions, then cool and put them in small containers. Then these containers are frozen in the freezer. If you don't have enough free time, you can defrost a ready-made dish and serve it yourself or with any side dish that is boiled or fried for 10-15 minutes.

When buying, buy oyster mushrooms without a whitish coating on mushroom caps - it signals a long shelf life of mushrooms. The mushrooms should be slightly damp, not chapped.

Ingredients:

Oyster mushrooms - 500 g

Onions - 1 pc.

Vegetable oil - 3 tbsp.

Salt and pepper to taste

Cooking steps:

Remember that onions are fried first - this is a prerequisite, since the onion pulp is denser, and the mushrooms release liquid during heat treatment. Therefore, if you do not fry the onion slices right away, but add it along with the oyster mushrooms, then you will end up with stewed onions of a dense consistency.

Prepare all the products: peel the onion, cut the mushrooms from the mycelium, rinse everything, removing dust and dirt. Cut the vegetable into half rings, and cut the oyster mushrooms into medium cubes, cubes, etc. - optional.

Heat a frying pan with vegetable oil, add the onion and fry it for about 2-3 minutes until transparent over medium heat. It is advisable to choose a container with high sides, since mushroom slices will lose about half the volume of their mass, releasing liquid.

Then add the sliced ​​oyster mushrooms as soon as the onions are soft and translucent.

Salt and pepper immediately - the salt will "draw" the liquid out of the mushrooms. Stir gently and simmer the entire contents of the pan over medium heat for about 10 minutes, stirring occasionally. The liquid must evaporate, otherwise it will turn out not fried, but stewed mushrooms.

As soon as this happens, stir again and watch the whole mass - it will brown and brown very quickly. Turn off the heating.

Taste the dish and adjust if necessary. Place oyster mushrooms, fried with onions, on plates, garnish with fresh herbs and serve warm.
