The best option for creating a pancake dough is with kefir and milk in boiling water. Baking from it will turn out to be tender and soft, melting in your mouth, and most importantly, it will not tear when turned over to the other side during frying.

If desired, baked pancakes can be greased with butter, but since the vegetable oil has already been added to the dough, they may turn out to be too greasy. Proceed to your liking. By the way, ghee can be added to the dough instead of vegetable oil.

Ingredients:

Chicken egg - 3 pcs.

Kefir - 100 ml

Milk of any fat content - 200 ml

Boiling water - 100 ml

Wheat flour - 8 tbsp. with a slide

Salt - 2 pinches

Sugar - 50 g

Vegetable oil - 2 tablespoons

Prepare food.

Drive the chicken eggs into a deep container, add kefir and milk of any fat content there, salt and add granulated sugar. Whisk all ingredients thoroughly with a whisk or mixer until smooth.

Stir in the sifted premium wheat flour. Beat everything well again so that no lumps form.

At this point, set the dough container aside for 20 minutes. During this time, gluten is activated in the flour. Failure to fulfill this condition and immediately starting to bake pancakes, you risk getting a liquid mixture, the baked goods from which will tear when turned over.

After 20 minutes, pour boiling water and vegetable oil into the container, mix immediately.

Heat a pancake skillet and brush it with oil. Pour in a serving of dough and round it. Bake until the edges of the pancake are dry. Gently flip over to the other side, grabbing the edge and helping yourself with a spatula.
