Delicious puff pastry cheesecakes with cottage cheese are ideal as a dessert for tea drinking.

They are baked both in portions and in one whole cheesecake.

The cooking process is very simple, as the dough is puff pastry. It is best to take a ready-made one, because there is less work with it, you just need to defrost it before cooking. You can buy it at any supermarket. For the recipe, I recommend using yeast.

Take cottage cheese from 5% fat, but homemade is preferable, because it will be tastier with it.

Ingredients:

Puff yeast dough - 400 gr.

Cottage cheese 5% - 200 gr.

Sugar - 3 tbsp. l.

Chicken egg - 1 pc.

Greek yogurt - 2 tablespoons l.

Strawberries - 150 gr.

Wheat flour - 20 gr.

Salt - a pinch

Preparation:

1. Prepare all the required ingredients according to the list.

2. Transfer the cottage cheese to a deep bowl, break an egg there, add sugar (or jam, honey, syrup) and a pinch of salt. If instead of cottage cheese you take sweet cottage cheese mass, then you do not need to add sugar.

3. Blend with a hand blender and add Greek yogurt. You can replace it with sour cream or heavy cream.

4. Stir well until smooth with a spatula or fork. If you like, you can add dried fruits or nuts at this stage.

5. Wash the strawberries under running water, peel and let them dry. Next, cut into pieces, transfer to a bowl and add sugar. If you want a sour cheesecake, don't add it.

6. Use a fork or blender to puree the berries. Then transfer to a saucepan with a thick bottom, pour in 50 ml of water and boil for 15 minutes over low heat without a lid.

7. In the meantime, let's do the test. Before cooking, it must be defrosted; for this, put it out of the freezer into a plate for 45-60 minutes. Then roll out into a layer 10-13 mm and cut out the circles with a mug or glass. Remove the middle from half of the blanks, leaving a rim. Next, blind the circles and rims together.

8. Place the strawberry mass on the bottom of each circle.

9. Then evenly distribute the curd filling on top of the strawberries and transfer the blanks to a baking sheet. Whisk the egg into a lather and brush over each cheesecake. Place the baking sheet in a preheated oven to 190 degrees for 25-30 minutes. Then take it out and let cool slightly.

10. Ready-made puff pastry cheesecakes with cottage cheese, if desired, can be decorated with chocolate sauce, nuts, chopped berries or coconut before serving.

Dessert goes well with berry tea or cocoa with milk.
