Cookies with sand crumbs on the surface and stuffed with jam have several names. The most popular, perhaps, "Tertoe" or less common - "Curly". It was cooked back in Soviet times, when the recipes were copied by hand into a notebook and carefully stored in a drawer of the kitchen table.

This recipe uses the simplest, not too expensive products that were available even in times of scarcity, so cookies can be called budget baked goods. If it was not possible to buy butter, then the hostesses prepared dough based on margarine. Preserves, jams and marmalades were cooked in many families and each time, adding a preparation from other berries and fruits, baked goods with a new taste were obtained.

Just like a set of products, the cooking process is as simple as possible, and the peculiarity of molding into the fact that the dough is grated and from this the structure of the finished biscuit is obtained especially crumbly.

Ingredients:

Wheat flour - 420 g

Butter - 250 g

Chicken egg - 1 pc.

Sugar - 100 g

Vanillin - to taste

Jam - 1 glass

Step by step recipe:

Prepare your ingredients. You will need cold butter, cut into small cubes.

Mix granulated sugar with vanilla. Cinnamon can be added instead of the latter. It all depends on jamto be used in the filling. For example, with apple or pear - cinnamon goes very well.

The number of products is designed for a rectangular shape of 28 x 20 cm.

Pour flour into a deep bowl and add cubes of butter.

Using your fingers, quickly rub the butter and flour into crumbs, which will not contain large pieces.

Separately, beat the egg and sugar mixed with vanilla with a fork. Add this mixture to the butter crumbs and knead the dough.

Like any shortbread dough, the crumb cookie dough does not need to be kneaded for a long time. As soon as the ingredients come together and begin to gather in a lump, stop kneading.

Divide the dough into two unequal pieces, shape them into sausages and wrap them in cling film. Put it in the refrigerator for 40-60 minutes or in the freezer for 20-25 minutes, then after cooling it will be easier to work with.

Turn on the oven to preheat to a temperature of 180-190 degrees. Line a suitable baking sheet or dish with baking parchment.

Remove most of the dough from the refrigerator and grate onto a prepared baking sheet. Then spread evenly with your hands, lightly pressing the dough around the entire perimeter to create small sides that will prevent the jam from flowing out during baking.

Now it's the turn of the jam (or jam) - use a spoon to distribute it on top, a little short of the edges.

Remove a smaller portion of the dough from the refrigerator and rub over the jam. Spread the crumb gently over the entire area, but do not press or crush it.

Bake the resulting pie in a preheated oven for about 30 minutes, or until golden brown.

Next, let the baked goods cool slightly in the form (10-15 minutes), then drag by the edge of the paper from the baking sheet onto the board and cool completely. Then cut into square cookies.

Hot baked goods will be difficult to cut into even products, because hot jam is too "fluid" and can not only flow out, but also burn, and the dough is tender and brittle.
