Every weekend neat stacks of pancakes come up in my kitchen. For many years they have been a traditional addition to my family's dinner. It all started back in 2005, when I, a young mother, began to feed my baby with kefir from the dairy kitchen. Believe it or not, he drank exactly half of the suggested volume. Not a gram more! The remains acidified, and I decided not to waste the good. Kneading the dough. Then only my husband was happy with my first pancakes.
2005-2015 - experience of a decade
Time passed. We had a second son, then a third, and, paradoxically, the younger boys also drank kefir with pleasure, but in a cup. The second one invariably remained sour in the refrigerator, because when buying a bag of kefir, you realize in advance that its volume is 2 cups, and a liter is 4 cups (all three drink). So the classic cup of kefir remains in the refrigerator every day. And I bake pancakes on that kefir.
Over the years, the volume of baked goods has increased significantly, because the "men" grow and eat a lot. On weekends, I bake up to 50 pancakes the size of 2 palms. If I break up, I can bake a good hundred. We have guests. I often collect a plate of pancakes for work. Everyone knows my pancakes. Once colleagues offered to participate in the competition for the festive event "Maslenitsa". It was 2015.
Tempting offer
A team of "hostesses" was recruited, whose pancakes could compete with the baking of the bread maker. Dozens of women, mostly of retirement age, came to the selection. I was the youngest in my 30s.
It was scary even to start, but I took a chance. My pancakes did not take first place, but entered the top 5 of the best!
Then, on Maslenitsa, it was proposed to feed the wishing townspeople on the main square during the festive events. I offered to buy pancakes by the piece! For a municipal enterprise that provides meals in schools and kindergartens in the city cannot go out to bake pancakes - it is not profitable (small volumes), local bakeries organized only buns and pies, but pancakes, which are a symbol of the holiday, few wanted bake.
I make money from a hobby
I am not a businessman and have nothing to do with business, but here it was offered to pay in cash after the fact.
Pancakes were offered to be redeemed at 10 rubles apiece. They asked for 5000 pieces with the question of how much I could bake. Now the calculation:
- flour 1 kg - 30 rubles;
- egg 12 pieces - 60 rubles;
- kefir 2 liters - 50 rubles;
- vegetable oil half a liter - 40 rubles.
In total, I got 180 rubles for consumables. From the dough prepared with so many ingredients, I bake 120 pancakes in a frying pan with a diameter of 20 cm. It takes 1.5 minutes to bake one pancake. Therefore, 120 pancakes can be baked in 180 minutes (3 hours). Or 480 in 12 hours.
In theory, I can bake all day long with light snack breaks. After consulting with my husband, I made up my mind. I took an order for 500 pieces. According to calculations, it turned out that I had to work all Saturday (Maslenitsa is celebrated on Sunday) and preferably at night. And bake me for 12 hours! (They took the pancakes early in the morning). I got out of the situation as follows.
First money
I took out all my pancake pans (I found 8 pieces), because due to the large volumes of baked pancakes, I have pans once a year. I didn't throw away the old ones, and 8 of them turned out to be in decent condition. But my gas stove has 4 burners, and I, having quite successfully regulated the gas, took up baking in 4 pans.
As a result, I baked 500 pancakes in 4.5 hours. The ingredients for the dough took about 800 rubles. In the morning, the pancakes were taken away, leaving me at home with a five-thousandth bill in my hands. It was delicious!
Part of this money went to red caviar! Yes, we could not afford to buy red caviar. We eat pancakes with jam, jam, sour cream, sometimes even stuffed with meat and vegetables, but caviar! My pancakes made it possible to dine on pancakes with caviar. I will never forget that Shrovetide.
Finally…
I developed a friendly relationship with a businessman who loves pancakes. Since then, every year at Shrovetide, I bake pancakes for our townspeople, which fly away much faster than hot cakes.
As for the cost, it is growing. In 2020, I will bake a whole 1000 at 20 rubles apiece. And this is great!
