Garlic croutons from black bread in a pan

Appetizing-smelling bread croutons with a charred crust are not just a bachelor snack with a glass of strong alcohol, but also a delicious substitute for fresh bread and baked goods for various soups, rich borscht and broths.

Ingredients:

Black bread - 5 slices

Garlic - 1 clove

Rosemary - 2 branches

Vegetable oil - 40 ml

Sea salt to taste

Step by step recipe:

Step 1 - To make garlic brown bread croutons at home, take the foods listed. Since the bread in the recipe is declared black, then choose rye, wheat, buckwheat flour, or another, but the darkest one. In which the bread sourness of malt is clearly felt and which is especially suitable for savory sandwiches, all kinds of crackers. The vegetable oil can be of any variety, but refined so that it does not smoke when frying and the croutons themselves do not turn bitter later. If you want to add flavor or add character to the bread, toss in the herbs of your choice.

Step 2 - Warm up the pan, after about half a minute, pour in vegetable oil and throw in fresh rosemary branches. This step is arbitrary. If you don't like the aroma of rosemary, substitute thyme, sage, cilantro, or eliminate the herbs altogether. I must say that fried rosemary needles quickly lose their natural hardness and not only give the oil aroma, but themselves become very tasty, crispy, brittle, like chips. Dry the branches to a dark color, move them to the board and catch them as they fry.

Step 3 - The bread slices should be evenly soaked in oil and cooked through. Slice neatly to the same thickness. Move the herbs to the edge of the pan and lay out the bread. Do not press, fry in batches first from the bottom.

Step 4 - Then turn it over and let it char from the back side. Add oil if necessary.

Step 5 - Transfer the hot black croutons to paper (towel or napkin), which will absorb excess fat. Turn over. Immediately, without cooling, rub generously with a chopped garlic clove. We cover the entire surface with garlic, including the edges. Sprinkle with large crystals of salt and fried brittle rosemary needles if desired.

Step 6 - Serve garlic croutons from black bread to the table, complementing, for example, pickles and herbs.
