Creamy porcini mushroom soup: long ago abandoned other recipes - simple ingredients and easy to prepare

This creamy porcini mushroom soup is good because it cooks very quickly. No one will choose in it what they like or dislike.

The consistency of the finished dish is quite uniform and many will like it.

Porcini mushrooms, in themselves, are very aromatic and are the most delicious of all. Therefore, no one can resist the aroma of such a soup.

Step by step recipe:

Boil porcini mushrooms.

Place the mushrooms in a saucepan and cover with water. Place on the stove and bring to a boil. During the heating process, foam will form, which must be removed with a spoon.

When the mushrooms come to a boil, add the chopped potatoes to the pot and boil them all together for 10 minutes to soften.

Chop the onions and carrots. It is not necessary to grind too much. It is enough just to chop the onion and grate the carrots on a coarse grater.

Heat the pan and pour some vegetable oil on it. Place chopped onions and carrots. Fry for 3-5 minutes.

Then pour everything from the pot into a stationary blender. Add roasted onions and carrots and peeled garlic. Cover and grind everything into a homogeneous mass.

Transfer everything from the blender back to the pot. Add cream.

Stir well and bring to a boil. Add some salt and spices to taste.

Do not use highly aromatic spices. Otherwise, they will clog the taste and aroma of the mushrooms themselves. It is enough to take dry dill or parsley.

Pour the finished cream soup into bowls and sprinkle with fresh herbs. You can add a dish croutons.

  • Porcini mushrooms - 300 gr.
  • Onions - 2 pcs.
  • Carrots - 1 pc.
  • Potatoes - 2 pcs.
  • Cream 30% - 150 ml.
  • Water - 1.5 liters.
  • Garlic - 3 cloves
  • Salt to taste
  • Spices to taste
  • Vegetable oil - 20 gr.
  • Croutons - for serving (optional)

If you have never tried cream of mushroom soup, be sure to rush to prepare it. For a richer aroma of the finished dish, you can add some dried mushrooms when cooking.

This soup may well take its place of honor on the everyday lunch menu. Due to the fact that it contains few carbohydrates and fats, it can be consumed even by those who are on a diet. And the calorie content of the finished dish is quite low.
