Meatless gravy for mashed potatoes, rice, buckwheat and pasta

Often you want to brighten boiled pasta or porridge with a juicy, fatty sauce when serving. But what to do when meat is out of stock? You can create a gravy without it, such as sour cream or any other dairy product without additives.

Onions will be a must-have, so add 1 whole head for each eater. You can use any spices and seasonings you like, creating a familiar dish with a new taste and aroma every time.

The gravy can be served as a standalone dish - most people simply soak it with bread crumb. To make it richer, replace vegetable oil with lard: pork or goose.

Ingredients:

Bulb onions - 1 pc.

Vegetable oil - 30 ml

Sour cream of any fat content - 50 ml

Water - 0.5 tbsp.

Salt and pepper to taste

Green onion - 6 stalks

Preparation:

1. Peel a large onion and rinse in water, cut into small cubes. You can use not only onions, but also shallots, the white part of leeks. The cutting method does not matter: cubes, rings, half rings, etc. - optional.

2. Pour odorless vegetable oil into a saucepan or frying pan with high sides, or put lard. Preheat by placing the container on the stove and turning on maximum heat. Place the onion slices and reduce the heat to medium so that they don't burn. It is preferable to use odorless oil: sunflower or olive. Saute the onion until golden brown, but do not fry it!

3. This will take no more than 2 minutes with occasional stirring. The slicing should be soft, loose, but not overcooked.

4. At this point, add sour cream of any fat content, salt and ground black pepper to the container. It is permissible to replace sour cream with classic thick yogurt, cream with a fat content not higher than 35%.

5. Pour in hot water and bring to a boil. If you plan to create a thick gravy, then you can add some premium wheat flour or starch (corn, potato - 1-1.5 tablespoons) and beat thoroughly with a whisk so as not to form lumps. Wheat flour gravy will thicken when heated.

6. Chop the washed green onions or other herbs, add to the container and simmer for about 1 minute.

7. Turn off the heat and let the dish cool slightly.

8. The onion and sour cream-based gravy without meat is ready.

Serving the gravy to the side dishes, pour it over them. Boiled pasta, mashed potatoes, rice and wheat porridge are especially tasty with it.
