Salad with cabbage and green peas

If the cabbage is chopped to a crumb, as for salsa or thick dips, the salad will come out surprisingly tender and juicy. This method is practiced by the popular cook Jamie Oliver. Try to repeat - it's simple, but it changes the dish dramatically.

Use cabbage "tinsel" as a base for green peas, vegetables, olives, all kinds of greens. For filling, toss in slices of cheese and ham, cold poultry, or beef.

Ingredients:

White cabbage - 150 g

Green peas - 50 g

Milk - 40 ml

Vegetable oil - 80 ml

Dry mustard - 3 g

Lemon juice - 1 tsp l.

Parsley - for serving

Salt, black pepper - to taste

Step by step recipe:

Step 1 - Following the list provided, take the required foods. The easiest way to dress your kale and pea salad is to use a store-bought mayonnaise. If you have the time and the desire arises, try out the recipe for homemade mayonnaise. With a minimum of effort and products, you will get a homogeneous and thick mass for dressing any kind of salads. The main feature is mayonnaise without eggs (as a rule, raw eggs are injected into it).

Step 2 - Let's start the process for those who decide to whip the dressing / mayonnaise on their own. Recommended condition - milk should be at room temperature, remove it from the refrigerator in advance. Mix milk with sunflower, corn, olive or other vegetable oil in a ratio of 1 to 2 (one part of milk accounts for two parts of butter). In fact, these two products form the basis. The rest is flavors, flavor enhancers: lemon juice (or wine vinegar), salt (optional plus sugar), mustard, hot pepper (spicy herbs). We lower the immersion blender with the "knife" attachment into the bowl with all the components and beat for about a minute. If the mixture does not thicken, then there is not enough oil. Pour in another spoonful, without stopping whipping.

Step 3 - As a result, we get homemade mayonnaise without eggs with an ideal stable and creamy structure.

Step 4 - Cut the clean cabbage into pieces of any size - lower it into a chopper with a "knife" attachment and crush it into small "flakes".

Step 5 - To the cabbage slicing, throw in the green peas, previously scalded and immediately doused with ice water.

Step 6 - Generously fill the salad with cabbage and peas with mayonnaise, try it. Salt and pepper if necessary.

Step 7 - Serve fresh salad with cabbage and peas on your own or as an addition to hot meat dishes and all kinds of side dishes. Bon Appetit!
