Carrot patties with semolina are the perfect dish when you need to quickly prepare breakfast, lunch or dinner. The beauty of this recipe is that the main ingredients are almost always at hand.

You will need: carrots, semolina, flour, eggs, half an hour of your time and a desire to experiment. Any greens will do. Dill, parsley, saffron go well with carrots.

Vegetable cutlets are good both as a side dish and as a main course. Vegetarians and fasting people will appreciate them. They will also appeal to those who follow the figure and lead a healthy lifestyle. Carrot cutlets can be safely included in the children's menu.

Ingredients:

Carrots - 500 gr.

Semolina - 130 gr.

Onions - 1 pc.

Egg - 1 pc.

Greens - 20 gr.

Wheat flour - 40 gr.

Vegetable oil - 35 ml

Salt, black pepper, spices - to taste

Preparation:

1. Prepare all the ingredients you need. Wash and peel carrots. If you want to shorten the cooking time for cutlets, boil the semolina in milk beforehand.

2. Carrots can be coarsely grated or cut into strips. Transfer to a deep bowl. Break the eggs in there. Season with salt, pepper and spices to taste.

3. Mix everything well and add the chopped herbs. In summer, you can add fresh, and in winter dry mixes or frozen preparations help out.

4. Stir again. Peel the onions, cut them into random pieces and fry over medium heat, without a lid. Don't forget to get in the way. This will take approximately 2-3 minutes. Add onions to carrots.

5. Mix everything, add semolina and sifted wheat flour. During the sifting process, it is enriched with oxygen. The dough then turns out to be more homogeneous and fluffy, tender and without lumps.

1. Knead the minced carrot and let sit for 10 minutes. Form the patties. To do this, take a little vegetable mass, roll it into a ball, flatten it and roll in flour.

6. Put the formed blanks in a hot frying pan. To reduce calories, you can either fry in a non-stick skillet without oil, or steam in a slow cooker, or bake in the oven.

7. Fry on both sides for 3-4 minutes each over low heat under a closed lid.

8. Arrange on plates, season with sauce and serve.

A sauce made from Greek yogurt, basil, minced garlic, mustard and spices works well with carrot patties. From the purchased ones - you can sour cream, ketchup, mayonnaise, satsebeli or adjika.
