Mullet is an incredibly popular in Odessa, very tasty Black Sea fish. It was her in the famous song of Mark Bernes that Kostya brought full scows to Odessa. Previously, mullet was bought in large quantities, fried right in the yard and invited all the neighbors for dinner. Now everything has changed, unfortunately, but we continue to cook this delicious fish as before.
Ingredients:
Mullet - 500 g
Flour - 3 tablespoons
Salt to taste
Ground black pepper - to taste
Lean oil - 4 tablespoons
Seasoning for fish - 1 tsp

Let's prepare products according to the list. The fish should be taken fresh, caught at night, then it is most delicious when fried. It is very simple to determine this - the eyes are transparent, shiny, the gills are red, and the belly is dense and elastic. Although, if you show up at the "Privoz" at 8-9 am, then buying such a fish will not be a problem at all, there really is a shaft of it, of different sizes.
The first step is to peel the mullet. It's easy and pleasant to do. The scales are very easy to clean, and when removing the insides, the main thing is not to crush the bile. Wash my abdomen under running water, remove the film inside (it is bitter), and be sure to cut out the gills.
Then salt and pepper the mullet to your liking, sprinkle it with seasoning for fish, but these innovations are optional. If you love the natural taste of this fish, then you can do without seasoning.
Now each mullet needs to be thoroughly rolled in wheat flour, it will give that very crispy crust, for which everyone adores this fish.
Everything, preparation is over. Now we heat a frying pan, pour a large amount of refined vegetable oil into it and fry the mullet over high heat on both sides until crisp. 2 minutes will be quite enough, although it depends on the size of the carcasses. Put the finished fish on a paper towel so that the excess oil is gone.
They eat fried mullet with their hands, and serve it with fresh vegetable salad and lots of napkins. She is like seeds, it is simply impossible to come off. Delicious.
