Today I offer a budget, light version of meatless cutlets. They are prepared from onions, which often surprises many, but nevertheless they turn out to be tasty and satisfying. And, by the way, having tried such cutlets, few people will guess what is in the composition. Therefore, you can safely offer them to fussy people who do not eat onions.
Onion cutlets with semolina can be prepared for both lunch and dinner.

Ingredients:
Bulb onions - 500 grams.
Tomato juice - 400 ml.
Semolina - 100 grams.
Salt to taste
Ground black pepper - to taste.
Vegetable oil - 2 tbsp.
Chicken eggs - 2 pcs.
Garlic - 3 cloves.
Step by step recipe:
Prepare all ingredients as listed. You can cook a simple version of onion cutlets, without sauce, but I stopped at the choice of stewing them in tomato juice. They turned out to be very tasty, soaked in gravy.
Use a good quality
tomato juice. You can buy packaged, the main thing is to be sure of its taste and quality.It is better to chop the onion very finely with a knife rather than chop it in a blender, since a lot of juice is formed, which will need to be drained and the dish itself will turn out to be dry.
Peel the onion and garlic, chop finely with a knife. Then chop very finely, almost into gruel.
Place the chopped vegetables in a bowl, add the semolina and stir. Leave for 10 minutes for the semolina to swell a little.
Add eggs, salt and pepper to taste.
Mix the dough well, it should look something like pancakes.
Pour the butter into a pan with wide rims and spoon the dough in portions, forming cutlets. Fry over medium heat until golden brown on both sides.
Put the first batch of cutlets on a plate and fry the rest.
After all the cutlets have been fried, put them in the same pan. It's okay if it turns out in several rows.
Season the tomato juice to taste, you can add a little salt and pepper. If you like it spicy, then add some ground chili. Pour over cutlets with juice, bring to a boil, reduce heat to low and simmer for another 10-15 minutes.
Serve ready-made onion cutlets in tomato sauce both hot and cold. They are very tasty combined with mashed potatoes or corn porridge.
