Glass noodles with vegetables: delicious in forty minutes

I know that funchose salad - glass noodles - is loved by many, but for some reason, again, many are sure that it is difficult to cook it at home. I assure you, this is a matter of half an hour. Okay, forty minutes. And then, in the event that we make a complex salad, which does not even die for a salad, but is a full-fledged dish for the same dinner.

Don't believe me? Let's try: funchose with vegetables and unagi sauce is a classic, one might say, dish already. It tastes much better at home than in any restaurant.

What do we take

• Funchose noodles - 100 gr

• Carrots - one piece

• Lemon - one piece

• Soy sauce - from a teaspoon to a tablespoon

• Unagi sauce for eel 50-60 ml

• Sweet red pepper - 2 pieces 140-250

• Fresh cucumbers - 2 pieces

• Olive oil - 3 tablespoons

• White sesame

• Fresh parsley - half or even a quarter of a bunch

• Salt

How do we cook

First of all, preheat the oven to 220 ° C, put sweet peppers on a baking sheet and send them to bake. Usually it takes 20-25 minutes for them to cook.

While the peppers are baking, finely chop the parsley, cut the cucumbers and carrots into thin strips (preferably the same size).

Prepare the dressing: in a small bowl or jar, mix unagi sauce, soy sauce, juice of half a lemon and 3 tbsp. tablespoons of olive oil.

When all this is ready, we take up the noodles. I think everyone knows that you don't need to cook funchose. Just fill it with boiling water and leave it for 6-8 minutes, then put it in a colander and sprinkle it with oil so that it doesn't stick together.

It’s just time to get the peppers out of the oven, and as soon as they cool down a little, we peel them, remove all unnecessary and cut into large strips, shaped like cucumber and carrot strips.

Now mix the vegetables in a large salad bowl, season with the resulting sauce, mix and let stand for five minutes. Only then add the noodles. If there is little salt, you can straighten it with salt (there are already enough sauces).

Serve sprinkled with sesame seeds.
