It contains all vitamins and minerals necessary for the body, as well as carbohydrates. Everything is cooked in one pan, which is very convenient and simple. Ingredients:
Eggplant - 400 g
Potatoes - 400 g
Bulb onions - 1 pc.
Carrots - 1 pc.
Garlic - 1 pc.
Tomatoes - 3 pcs.

How to cook:
Prepare foods from the list. Peel the potatoes, onions and garlic. Wash them under running water along with the rest of the vegetables and herbs. Pat dry with paper towels.
Heat the lean refined oil in a skillet. Cut the potatoes lengthwise into quarters, fry until golden brown on all sides for 5-7 minutes.
Reduce the heat under the skillet. Cut the onion into half rings and add to the potatoes. Fry for 2-3 minutes.
Cut off the ends of the eggplant on both sides, cut it into small slices or cubes, send it to the pan. Once it has absorbed all the oil, pour in some water, cover and simmer for about 5 minutes.
Potatoes and eggplant taste sweet, so it is advisable to shade them with sourness. Cut the dense tomatoes into small pieces and crush the garlic clove with the back of a knife. Transfer everything to the pan. Tomatoes of the "cream" variety are well suited for stewing, they have dense flesh and the skin can not be peeled. Simmer for another 5 minutes.
