A delicious and hearty soup at the same time from ripe tomatoes, with chicken and zucchini suitable as a simple dietary meals or a light lunch.
Recipe Tomato soup with chicken and zucchini
Ingredients:
Chicken fillets - 1 pc.
Young zucchini - 1-2 pieces.
Carrots - 1 pc.
Onions - 1 pc.
Ripe tomatoes - 3-4 pieces.
Garlic - 1-2 cloves
Olive oil - 2 tbsp. l.
Salt, black pepper, sugar, dried aromatic herbs, fresh dill - to taste
Preparation:
First, you need to prepare a puree of tomatoes.
Tomatoes should be very ripe, but if there are none, it is better to take canned pulp.
In very extreme cases fit the tomato juice, but the flavor will not be so intense.
Scald the tomatoes with boiling water and peeled. cut the tomatoes in half crosswise and remove seeds with a spoon. Cut the tail. Shift the tomato pulp in a blender and grind.
Clean the onion and cut into small pieces. Garlic is also cleared and ground. Purified carrots cut into small cubes. With young zucchini skins should not be removed, just zucchini cut into cubes.
Preheat a skillet in a couple of tablespoons of olive oil, fry the chopped onion a few minutes and add to it the carrot and garlic.
Slightly salt and pepper, stir fry for about 5 minutes.
Chicken fillet cut into pieces, the size of which should be no more than the zucchini cubes.
We spread in a saucepan sliced and fry about 5-6 minutes to white. Optionally, you can add a variety of herbs and spices.
Adding to the chicken zucchini, pour ¼ cup water, cover with a lid and simmer about 20-25 minutes at low heat. A lot of water is not necessary to pour as zucchini and chicken isolated in the process of preparing enough fluids.
Add the pureed tomatoes and a teaspoon of sugar. If the soup turns out very thick, you can pour a little water or white wine table. After the soup boils, boil for 10 minutes.
Pour the soup into bowls, sprinkle with chopped dill and serve.
