My all-time favorite, Korean style quick cucumber snack. I love these cucumbers, aroma and taste are simply beyond words, you have to cook and feel! Especially good such cucumbers for barbecue or just for meat. And I cook them for the festive table, they are always eaten first. They look very beautiful and the hand itself reaches for them! Try it!
I have prepared a short video recipe for making cucumbers (3 minutes). I told and showed everything in detail, look:
The first thing I do is wash the cucumbers well. I cut off the stalk of all cucumbers and cut it lengthwise into 4 parts, not reaching the edge of about 1 cm. These are the cucumbers.
I sprinkle them generously with salt, always inside too. And I forget about them for 15 minutes.
I'll do the stuffing for now.
Grated carrots. Can be used on a regular or on a Korean carrot grater.
I cut the onion into half rings. I put everything in a deep small bowl.
I chop a couple of garlic cloves through a press and also to vegetables.
I add one tablespoon of red sweet paprika. (in our city, it is sold in any store, for example, in Pyaterochka or Magnet).
I will also add one tablespoon of sesame seeds, a mixture of peppers to taste (can be replaced with red hot peppers), a tablespoon of olive (sunflower) oil, and two tablespoons of soy sauce.
Advice: sesame seeds need to be lightly fried in a dry frying pan, then it will reveal its aroma and will be much tastier.
If desired, you can add 0.5 tsp. sugar or any sweetener. I added a few drops of Stevia. I mix everything.
So the cucumbers arrived. They started the juice. I rinse the cucumbers well to remove excess salt and wipe dry with a towel.
I add the filling to each cucumber. This is how it turns out:
