What I just didn’t make of zucchini, but then I got the idea that I needed to try to make something for dessert from this vegetable (there is a lot of it in the garden). And I decided to make zucchini cookies. I made the right decision - it's very tasty! The zucchini is not felt at all, my husband did not believe that there are zucchini in the cookies :) I highly recommend making such cookies.
I made a short video recipe for making zucchini cookies for you:
Step-by-step cooking recipe with photo:
Add half a teaspoon of soda to the curd
I will peel the zucchini and soda on a medium grater, you can also take zucchini.
Advice: if the zucchini is already old, then you need to get rid of the seeds.
Add a pinch of salt to the cottage cheese, 1-2 tablespoons of sugar (more if you really like sweets). I'll take Stevia instead of sugar.
I also add zucchini, egg, oatmeal. Mix well and leave for 10 minutes so that the oatmeal swells.
Then I add flour and knead the dough with a spoon. It turns out to be quite thick, it does not fall off the spoon.
I cover the baking sheet with parchment.
Advice: if in doubt about the quality of the paper, you can grease it with vegetable oil or even use a silicone baking mat or non-stick form.
Approximately 1 tbsp. I put the dough on a baking sheet and form a cookie.
Sprinkle sesame seeds and flax seeds on top. Poppy can be used.
I cook zucchini cookies in an oven preheated to 180 degrees for 15-20 minutes. The cookies are completely baked inside. You can make sure by looking at my video recipe above.
Enjoy your tea, here's such a beautiful cookie:
