I add dry yeast to warm water, by the way I take only 4 grams - this is quite enough. I stir it and while I'm doing the flour.
Sift flour into a deep bowl. I take 400 grams of wheat flour and 100 grams of rye flour. You can only take wheat.
Add a teaspoon of salt and mix a little.
I make a depression in the flour and pour out the water with yeast.
Mix quickly with a spoon, literally 20 seconds. The flour will mix with the liquid and that's enough.
I cover with cling film and leave in a warm place for an hour and a half.
After an hour and a half, the dough rises perfectly, like this:
I pour a little flour on the table and spread the dough. I also sprinkle the dough with flour on top. I press on the dough with my hands and make a rectangle or a circle (it doesn't matter). I fold the dough in half and then in half again. I put the edges of the dough in the middle, forming round cakes. Everything is simple and fast! I take a 3 liter pan, cover the bottom with baking paper. Sprinkle a little flour, shift our bun (seam down). I will make 3 cuts with a knife.
