I clean the pumpkin and cut it into cubes, like this:
I cut the onion into half rings. You can take the usual white or red.
I also cut the potatoes into cubes. You do not need to grind. I love it when the potatoes are whole, and not creep in the pan.
I “blot” the potatoes with paper towels to remove excess moisture.
The note! This will keep the potatoes whole when fried.

I send potatoes to a frying pan preheated with vegetable oil and cook over medium heat until half cooked. It will take about 10 minutes. Remember to stir from time to time.
Now I add the pumpkins and continue to fry for another 5 minutes.
I add the onion and continue cooking until cooked through.
As the vegetables are ready, I already salt and pepper to taste.
