Hello friends! This is "Kitchen Inside Out!" I have several recipes for pasties. The easiest one is on choux pastry. Especially my boys love pasties with capelin.

But this recipe is just perfect. Always juicy filling and crispy dough with "bubbles"!

The recipe was shared with me by my daughter-in-law, who worked for almost 7 years in the most popular cheburek house in our city. There was always a queue for them! This is despite the fact that there were 2 more similar establishments within a radius of 500 m.

First, I'll prepare the filling. Here's the first secret - as much onion as meat. Any meat is allowed. But usually cheburek is cooked with pork.

I chop onions and meat, chop in a meat grinder, salt. Black pepper - optional. Usually without it.

AND necessarily add cold water (about half a glass). I mix well.

Now the dough. Sift flour into a bowl. I pour in water (room temperature), add salt, vegetable oil and vinegar. Plain table vinegar 9%. No vodka. Vinegar!

I knead the dough. If it sticks to my hands, I add more flour (but a little bit). I leave the finished dough on the table under a towel for 20 minutes.

Then I divide it into 12 parts. I roll each part into a cake. Very subtle!

I spread the filling on one half. I cover with the other half and pinch with my fingers along the edge.

Then I take a regular plate and cut off the uneven edge of the cheburek. How I do it can be clearly seen in my video.

Fry pasties on both sides in a large amount of vegetable oil.
