In summer, zucchini is the main ingredient on our table. I cook them for lunch and dinner, and even for breakfast.
I will share one of my favorite summer zucchini breakfasts. It is very simple and quick to prepare. And my family always eat this dish with pleasure))

Now we are preparing breakfast
Everything is very simple and fast. First, I'll prepare everything.
I cut the zucchini into small cubes. I peel the tomatoes off and also cut them into pieces. Two ways how to peel tomatoes in 30 seconds, I showed here HERE.
Beat the eggs with salt and spices (I add black pepper, but, of course, you can take any spices)
I put a couple of tablespoons of flour and spices with salt in the bag. I use my green salt (the recipe was shared HERE). But you can also take any favorite spices.
Now here, in a bag, I put the sliced zucchini. And I shake the bag well so that the flour with spices evenly covers the pieces of zucchini.
I fry the zucchini in a small amount of vegetable oil (I shake off the excess flour first). Stirring constantly, fry until tender.
When the zucchini is tender, add the tomatoes and pour over the beaten eggs.
Cover with a lid, reduce heat to low and cook for 10 minutes. You can add cheese if you like. But even without it, it's very tasty!
It turns out an insanely delicious summer omelette! Try it! Even my kids are eating! And they are lovers of meat dishes, like dad))
