I love eggplants, so I cook them differently. But this dish is on our menu more often than others. I usually serve hot. But the next day, if it remains, it's also delicious!

How to cook

First, I will prepare the sauce, which I will spread on top of the vegetables. To do this, I mix sour cream, mayonnaise, garlic and cheese. I rub the cheese, pass the garlic through a press. I usually take sour cream with a fat content of at least 20%.

Here I want to note right away that yes, mayonnaise can be replaced with sour cream. But then the sauce turns out to be more liquid. Do not remove the cheese from the recipe - it will turn out completely wrong. Salt to taste. You can add black ground pepper. I stir it.

Now the eggplants. I do not peel the skin. It's just good for them. I cut it lengthwise, without cutting to the tail, to make a fan. Like this:

I cut the onion, tomatoes and potatoes into slices. Pepper - in rings. I usually add a little hot pepper - it tastes better with it. But, if you do not eat spicy, do not add.

Potatoes take longer to cook than other vegetables, so I cut them thinner or you can dip the already cut potatoes in boiling water for 3-4 minutes. But you can, of course, not add potatoes. It will still be tasty.

I "stuff" eggplants with vegetables.

And now I put the sauce on top. I put the form in the oven, preheated to 180 degrees at first for 20 minutes.

After 20 minutes, cover the form with foil and cook for about 25-30 minutes (until the vegetables are ready). Take a look in your oven. I cover it with foil not immediately, but after 20 minutes (this is not a mistake!). If you cover it all at once, all the cheese will stick to the foil!

I serve the dish hot, sprinkled with fresh herbs. This is delicious!
