Everything in this recipe is perfect! This is the only way to cook dumplings with potatoes! Perfect dough, delicious filling and always fried onion on top! The only thing that can be added here is fried lard... Do you also cook dumplings with potatoes?

First, the filling. I usually prepare it in advance. Boil the potatoes in salted water until tender.

Fry the onion in vegetable oil until golden brown.

I turn the potatoes into mashed potatoes. I add the fried onions. I stir it. The filling is ready. If there is little salt, it is better to add salt immediately. Let the filling cool down.

Now the dough. For this recipe, I use only custard! Sifting flour into a bowl. Beat an egg in a plate, add salt and vegetable oil. I mix it with flour.

And I add boiling water. Only the water boiled - straight into the dough! And knead gently. First with a spoon, then with your hands.

I put the dough in a bag and leave for 20 minutes.

Then I put it on the board. No additional flour is required here. The dough is just perfect! It is easy and pleasant to work with him. Can be rolled very thinly - does not break. And delicious))

I never cut out dough with a glass for dumplings! I form a "sausage", cut it into pieces and then roll these pieces. This is much faster and there is no dough residue, which then does not roll out again.

I spread the filling in the middle and sculpt the dumplings. This is how I get it:

I boil it in salted water. As soon as the dumplings surfaced, cook for 2-3 minutes and take out.

I put it in a deep plate and sprinkle with fried onions. It's sooooo delicious!

I remember serving with sour cream.

For the test:
• Flour (sifted) - 3 glasses
• Boiling water - 1 glass
• Egg - 1 pc.
• Vegetable oil - 3 tbsp.
• Salt - 0.5 tsp.
For filling:
• Potatoes - 800 g
• Onions - 2-3 pcs.
• Vegetable oil 50 ml
• Salt
