One of my favorite eggplant recipes. An incredibly delicious combination of baked and fresh vegetables! Both tasty and healthy!
Put the eggplants and peppers on a baking sheet. I prick the eggplants with a fork to bake them better. I bake in an oven preheated to 200˚C for 25-30 minutes.

Finely chop the onion. One small onion is sufficient. Transfer the chopped onion to a small container. I cut the tomatoes in half and grate them on a coarse grater. I throw away the peel.
Pour chopped onion with this tomato puree. Salt and stir. While I prepare the vegetables, the onions will just marinate.
Half an hour passed. I take the baking sheet out of the oven and let the vegetables cool slightly. To make the pepper clean better, I put it in a bag.
I remove the peel from the peppers and eggplants. And I cut them into small cubes. You can, of course, skip through a meat grinder, but it will already be a little different. I like it when vegetables are sliced exactly.
Transfer the sliced eggplants to a suitable container. It may seem right away that there are a lot of eggplants, but no! Don't reduce the amount of ingredients! It's so delicious that it won't even be enough))
I combine chopped eggplant, pepper, cilantro, a clove of garlic through a press and onion with tomatoes in a bowl. I fill with fragrant sunflower oil. If you don't like cilantro, you can substitute it for parsley. You can also use olive oil, but we like it more with sunflower. Salt to taste and mix.
Honestly - no salad needed! It is so delicious that even those who do not like eggplant eat it with pleasure. I am not exaggerating at all! And if you bake vegetables on a fire, it's generally difficult to stop))
Can be served with meat, fish, any side dish. When the caviar is infused in the refrigerator, it tastes even better. In the heat - you can't imagine better!

• Sweet pepper - 400 g
