Delicious dish. I love him both hot and cold. Serve instead of salad. But it can be served as a side dish for meat.
First you need to bake the vegetables. I usually cook 3-4 tomatoes for dinner. To do this, I bake one eggplant and one pepper in the oven. I prick the eggplant with a fork in several places.
I bake at a temperature of 190 degrees for 20-25 minutes.
I wrap the pepper still hot in a bag - this way the thin skin is easier to remove. When it cools down a little, I remove the skin, remove the seeds and cut the pepper into small cubes.
I also cut the eggplant pulp in the same way.
I combine pepper, eggplant, fresh herbs in a bowl (I have dill today). Salt and add a little black pepper. I stir it.
I cut off the caps from the tomatoes and scrub everything from the middle with a spoon, leaving only the walls. Tomato pulp won't come in handy in this recipe. It can be frozen, for example, and then added to borscht or to stewed vegetables.
I fill the tomatoes with filling, pour a little olive oil.
I cover with lids and put in an oven preheated to 190 degrees for 15-20 minutes.
All! Warm salad (or side dish) is ready! You can serve immediately. But it is also very tasty when cold!
