I love pickled eggplants, so I was very interested in a quick recipe for making them. Instant eggplants - I called them that))

How to cook

My eggplants and cut into pieces.

Not too shallow. I put the sliced ​​eggplant on a plate. Like this:

You can, of course, do without a microwave. Eggplants can be baked in the oven or simply boiled in a saucepan.

While the eggplants are in the microwave, I prepare the marinade. Combine soy sauce, lemon juice, honey and butter in a bowl. I use fragrant sunflower oil. Can be replaced with olive.

I mix it all and send ready eggplants to the marinade.

I definitely add greens. I take parsley, cilantro and some mint. But you can take any greens, of course. I cut the greens and add to the eggplants.

I'm mixing it all up. And you can serve! Delicious!

Can be served immediately. But when the appetizer is infused a little, it turns out even tastier!

If you like sweeter eggplants, you can add a little more honey. If there are spicy lovers in your family, add a little red hot pepper to the marinade. And garlic, of course, will fit perfectly here too.

But I still recommend trying this recipe)) Very pleasant, sour-salty-sweet taste with a hint of fresh greens. Well, very tasty! And fast!

• Eggplant - 3-4 pcs.
