The tortillas that I make more often than others. The recipe is very simple and always delicious.
How to cook
Sift some of the flour into a bowl. I add salt, sugar, egg, butter, sour cream and soda. I stir it. Gradually add kefir and more flour. I knead the dough.
Instead of kefir, you can take sour milk, yogurt, unsweetened yogurt, whey or fermented baked milk.
I add flour gradually! It always takes a different amount, so I will indicate the approximate weight.
I put the finished dough in a bag and put it in the refrigerator for half an hour.
Then I cut into pieces and form cakes. You don't even need to use a rolling pin. The dough is soft and the cake can be formed even with your hands.
Tortillas can be fried in oil or in a dry pan, or baked in the oven. I fry in oil. Then I put it on a paper towel.
For the filling, you can take cheese, cottage cheese (salted or sweet), potatoes, cabbage, beans, mushrooms, meat, liver, any greens, rice with an egg, as well as fruits, berries, jam... TASTY WITH ANY FILLING!
Today I have two fillings: Adyghe cheese (I like it very much in fillings) and boiled eggs with green onions.
I fry on both sides over low heat. When I turn the cake over, I cover the pan with a lid - this way the cake will bake better.
I bake in the oven at 180 degrees until golden brown.
