And my cupcakes turned out delicious and juicy. I was worried that the filling of the cupcakes might be a little dry, but everything turned out great, as I intended.

✅ To make meat-filled muffins, I used:

  • cottage cheese 9% - 150 g,
  • one chicken egg,
  • whole grain rice flour - 80 g,
  • a teaspoon of baking powder and a pinch of salt.
  • 3 chicken drumsticks (the weight of boiled drumstick meat in pure form turned out to be 150 g),
  • 40 g soft cottage cheese,
  • one onion - 115 g,
  • cheese - 40 g
  • salt, pepper, dry garlic, suneli hops.

✅Cooking.

We send the chicken drumstick to boil in salted water. I had a pre-cooked drumstick.

Chop the onion into smaller pieces and fry it in a drop of olive oil.

Add finely chopped chicken drumstick meat, a little salt, dry garlic pepper and suneli hops to the finished onion. And fry for a couple of minutes so that the meat is saturated with spices.

It will be ideal if the meat is not chopped, but cranked through a meat grinder - then the boiled meat turns out to be airy in the filling.

Cooking the dough. We mix cottage cheese, egg and salt. Add flour with baking powder and mix.

The dough is sticky!

From the dough we form baskets in muffin tins.

Add a heaped spoonful of soft cottage cheese to the filling (you can use natural yogurt) and mix well.

Put the filling in dough baskets and sprinkle with grated cheese on top.

We send it to the oven, preheated to 180 degrees for 30 minutes.

We serve hot. Enjoy your meal!
