Hello friends! I propose to cook samsa with pumpkin from unleavened dough. This dough, unlike puff pastry, is much easier to prepare and, moreover, it is less fatty. I like to add 1st grade flour to premium flour. It gives the dough a special taste and elasticity.

Samsa with pumpkin and unleavened dough
- Add salt and boiling water to the flour. Mix everything with a fork.
- Add vegetable oil. Knead the dough on the table until smooth.
- Cover with plastic wrap and leave for 30-40 minutes.
Filling - onions and pumpkin
- Everything needs to be cut into small cubes.
- Chop fresh parsley finely and chop a clove of garlic.
- Cilantro or ground coriander is suitable for this filling, all seasonings are optional and to taste.
- Add onion and herbs with garlic to the pumpkin.
- Add salt here.
- Roll a tourniquet out of the dough and divide it into 12 parts.
- Round the dough pieces and leave for 10-15 minutes.
- Prepare a baking sheet: cover it with parchment or grease with oil.
- Roll out the cakes.
Preheat the oven to 180 ° C degrees.
- Grease the flat cake a little with vegetable oil and put the filling.
- You can sculpt samsa with a triangle or quadrangle.
- Place them on a baking sheet.
- In the classic version, samsas are not molded, but folded and turned over. But then juice almost always flows out of them. In my version, all the juice remains inside.
- Samsa before baking can be greased with a loose egg, sprinkled with sesame seeds.
Baking time from 40 minutes to an hour.
- They should be golden brown and the pumpkin should be baked.
- I just take it and try it in 40-45 minutes.
- When done, be sure to let them cool a little, because the filling is very hot.

Unleavened dough:
320 g flour, w / s (or 100 1 s + 220 w / s)
160 g boiling water
5 g salt
1-2 tbsp vegetable oil

400 g onion
