No meat, sausage or eggs, but no less delicious! All fans of Olivier will definitely appreciate it.

And today I want to share a lean recipe for this salad. It turns out to be no less tasty than the familiar Olivier with meat or sausage. If you haven't tried it, I highly recommend it. In just a few days there will be a great reason for this :)

So let's get ready!
First, I'll make the lean mayonnaise. To do this, pour the liquid from the canned peas into the blender bowl. I add salt, sugar, mustard and apple cider vinegar. Beat with a powerful (!) Blender for about a minute.
Then gradually pour in vegetable oil and continue to beat for another 2-3 minutes.
Here is such a very tender, delicious snow-white sauce. Of course, for the salad I don't use all of it, in just a couple of spoons! This mayonnaise can be kept in the refrigerator for about a week.
• Pickle from canned peas - 80 ml
• Apple cider vinegar (you can grape) - 1-2 tsp.
• Sugar - 1 tsp.
• Salt - 1 tsp.
• Vegetable oil ~ 230 ml
Instead of meat and sausage, I add to this salad Champignon.
I cut them into cubes and fry them in a little vegetable oil. Salt.
When all the liquid has evaporated and the mushrooms are a little fried, I transfer them to a plate to cool.
I boil vegetables in advance (potatoes and carrots). They then cut better and do not fall apart in the salad.
I cut potatoes, carrots, fresh cucumber and pickled (or pickled) cucumbers into small cubes. Combine in a bowl.
There is also some finely chopped onion. You can pour the onion with boiling water for a few minutes (if too "angry").
To the rest of the ingredients I add green peas, from which I drained the mayonnaise liquid, and fried mushrooms.
I dress the salad with lean mayonnaise and stir. You can serve))
• Champignons - 200 g
• Carrots - 1 pc.
• Potatoes - 3 pcs.
• Fresh cucumber - 1 pc.
• Pickled cucumber - 2 pcs.
• Green peas (canned) - 150 g
• Onions - 1/4 pcs.
• Mayonnaise (lean) - 2 tbsp.
• Vegetable oil - 1 tbsp.
• Salt
